
Okay, the secret is out on my almond cookies. Meet the cookies that launched my career as a chef and later became the gift of the year for clients. Everyone flat out loved, lusted, and begged me for the recipe!
There are tons of phenomenal recipes out there, but this one is the unicorn of horses. Like the almond crescent cookies everyone loves, but much easier to make without all the time-consuming molding. And best of all, much higher in almonds, making them a much richer and nuttier experience.
Due to the high almond ratio, they are not overly sweet, just rich in nature’s flavors.
I can’t think of a cookie I’ve packaged as gifts more often than this one; as they also stay fresh for a long period! In fact, I used to send out at least 200 boxes of them for my clients, friends, and family just over the holidays.

And there is no need to blanch almonds or roast them, the cookies are simply delicious in their simple form. Grind your own almonds in a food processor until they resemble bread crumbs. If you keep your almonds frozen as I do for freshness, don’t worry they grind up frozen too. They just take a couple more seconds and make a loud noise of course.
